Generally its a bit risky to subsitute ingredients with other ingredients not listed in the recipe because it may have a slightly different taste, flavour and texture so the best outcome cannot be guaranteed. For example, when baking - plain (all-purpose) flour cannot be substituted for self-raising flour because they have different properties and uses however, self raising flour can be substituted with gluten free self raising flour if needed and it will still yield a similar result to the original recipe.
It is perfectly okay to double and half some recipes, however its helpful to stay consistent with the measurements when changing the recipe to avoid food and baking mishaps.
Yes. In most cases changing the milk in the recipe wont affect the taste or texture but using different types of dairy such as cream cheese or thickened cream instead of milk might affect the texture of the bread/cake and the overall dish. Coconut milk can also be substituted however it will affect the taste of dish making the dish have a subtle or evident coconut taste depending on how much is used.
